Easy Simple 30 minutes Kenyan meals

Given the busy schedule Kenyans have, many have neglected investing in home cooked meals due to time constraints.

This could be reason why there is a rise in fast food joints in many shopping centres and residential areas where one can easily get ready to eat meals like chips, sausages, chicken, burgers etc.

I have also noticed that many of the major supermarkets have their refrigerators shocked with ready to eat grains, vegetables. Whilst this may come in handy for a busy person, I would question their quality in terms of freshness of the produce.

With this in mind, I   will try through this article to give simple recipes of meals that can be cooked in less than 30 minutes

Easy simple 30 minute meal 1: Ugali

Ingredients:

  • Maize meal or rice flour
  • Water(amount dependent on the  number of  individuals to be served
  • Milk(1/2 cup will do)

Procedure:

  • Mix water and the milk, bring this to boil
  • Slowly and gradually stir in the flour
  • Once the flour thickens, reduce the fire and cover the mixture for 5 minutes
  • Stir up the  mix and  cover it for 5 minutes before placing in on a plate ready to eat

Serve this with any stew or vegetables

Easy simple 30 minute meal 2: Sweet potato stew

Besides being nutritious, this can also be served as a main course

Ingredients:

  • Sweet potato(quantity will be determined by the number of individuals to be served)
  • Onions
  • Tomato
  • Salt
  • Spices
  • Beef/chicken cubes
  • Oil for frying
  • Water
  • Dhania

Procedure:

  • Peel, wash and cube the potatoes to desired size
  • Fry onions till golden brown
  • Add in tomatoes and the beef/chicken cubes
  • Add in preferred spices and a little  water
  • Add in the potatoes and  water enough to slightly cover the sweet potatoes
  • Allow the sweet potatoes to cook slowly for around 15 minutes
  • Once cooked, add in dhania for seasoning
  • Remove from the fire and serve whilst still hot with strong tea

Easy simple 30 minute meal 3: Strong tea

Also referred to as black tea or plain tea

Ingredients:

  • Water
  • Crushed ginger
  • Sugar
  • Tea leaves(can also be herbal)

Procedure

  • Add  ginger and tea leaves into the water
  • Allow it to boil as you occasionally stir
  • Sieve into a post
  • Add in sugar(if needed)
  • Serve it together with the sweet potato stew above or any other dish

 

Easy simple 30 minute meal 4:  Noodles

Ingredients:

  • Noodlesnoodles
  • Onion
  • Tomatoes
  • Capsicum
  • Water
  • Gravy sauce
  • Jeera
  • Grated carrots
  • Minced meat(not mandatory)
  • Dhania
  • Oil for frying

Procedure

  • Add noodles into the water to boil
  • Sieve off excess water and allow the noodles to cool as you prepare the gravy
  • Fry onions, add in capsicum, tomatoes
  • Add in the required spices and salt
  • Mix in the grated   water, carrots and minced meat. Allow this mixture to cook for 7 minutes
  • Add in the noodles
  • Stir in using two forks to avoid breaking the noodles
  • Remove from the fire after two minutes and serve with  some bread and cold juice
